Yummy French Toast

I found this recipe first in one of Hungry Girl's cookbooks but adapted it a bit to our tastes. I also always use a 9-Grain Whole Wheat bread that is a bit higher in calories than the original recipe called for so I adjusted the recipe to take that into consideration.
Ingredients:
- 1/2c. Eggbeaters
-1/2t. cinnamon
-1/4t. vanilla
-3 slices whole wheat bread
-1 1/2t. powdered sugar

Directions:
Mix eggbeaters, cinnamon, and vanilla together in a bowl. Dredge the bread through the egg mixture on both sides. Then place each slice into a skillet (on medium heat) that has been sprayed with non-stick spray. Cook on each side until golden brown or cooked through. Sprinkle with powdered sugar and serve. This recipe serves 2 people, 1 1/2 slices of french toast.

Apple Oatmeal Cookies

This is a great cookie recipe that is easy to make and is better for you than most cookie recipes. I don't remember where this recipe originally came from but I have tweaked it a little to better suite our family's tastes.
Ingredients
1 medium Braeburn Apple chopped into small pieces
1/2 c. softened butter
1/2 c. brown sugar
1/2c. sugar
1/2t. vanilla
1 egg
1c. flour (I prefer whole wheat flour)
1/2t. baking powder
1/4t. salt
1 1/2c. quick oats
1/2t. cinnamon

Directions
1. Preheat oven to 350*. Lightly spray cookie sheet with cooking spray.
2. In a large bowl cream butter with both sugars.
3. Add vanilla and egg. Blend well.
4. Mix in dry ingredients (except apples).
5. Stir in apples.
6. Drop tablespoon size cookies onto prepared pans.
7. Bake for 15-18minutes.
