Oh boy it is seriously exciting to see that I am posting a menu that includes part of March! That means we are slowly getting closer to having S home with us again. YIPPEE!! We still have a while to go but have to enjoy the little things right?

Menu 10/10 through 10/16
As you can see this week we have Monday night football game as well as a Sunday night football game. So we will be spending two nights at Buffalo Wild Wings this week. I am again sharing all of our meals because I find myself referring to my blog whenever I am trying to remember what I had intended for us to eat. :) This week am trying a new recipe, which I will share Tuesday, that actually will cover several meals. I can't wait to try it!

This week as you can tell is all about comfort food. Fall is my favorite time of year and we are just starting to maybe see signs of fall here in Nevada. I miss the midwestern falls I grew up with so I am making a lot of comfort food to make up for it.

Friday: Barbeque Chicken with Baked Sweet Potatoes and Veggies
Saturday: Leftovers
Sunday: BLTs with Chips and Fruit
Again I am working to keep myself on an extremely tight grocery budget. My goal this week is to keep it under $40! I don't really need a lot but do have to buy organic milk and that gets expensive. My grocery list includes: tortillas, frozen corn, eggs, turkey bacon, turkey lunch meat, peanut butter, milk (skim and 2%) and chips.
We are also going to try consuming more real foods for our snacks. I am not sure S and H will love this but rather than something process for snacks we are going to try fruits, veggies or home baked goodies. I am hoping we can adjust to this change because I know it is better for us and will make it easier for me to reach my grocery budget goal.
I am also going to try to cook some of these meals ahead of time or at least get some of the prep work done early. As I have mentioned S works swing shift so our dinner meal is actually served at lunch. A few days a week we hit the gym in the morning before lunch and I find we often pick up Subway or Chipotle on those days rather than come home and hurry through preparing a meal. So this week I am going to try to prepare a bit in advance on these days so that hopefully we can avoid the fast food places.

Snacks/Desserts 9/5 through 9/11
I am going to try something different this week, S and I always have a snack after he gets home from work. It is our time and we like to unwind watching some television and eating a snack. I haven't been buying a lot of snack type foods for a couple of reasons, 1) a lot of snacky type foods are high in processed junk and 2) I love to snack so if we have snacks on hand I WILL snack.
This week I am going to try to plan a couple of snacks I can make over the weekend and have on hand for the week. Now the hard part will be keeping S, H, and I out of the snacks. :)
So I am thinking of making the following for our weekly snacks:
Monster Cookies with milk
Corn Tortilla Chips with Salsa
Air Popped Popcorn (this one I will make the night we decide to eat)
Applesauce Brownies
I am looking forward to trying out these recipes and seeing if I can keep my hands out of the "cookie jar" so to speak and not snack too much. I will let you know how it goes!

Menu 8/29 through 9/4
Every week I work very hard to keep my grocery budget (excluding my Bountiful Baskets purchase and the Grassroots purchase I recently shared) at $50 or less. Mrs. Seamonster got me showed me its possible so every week that is the goal I strive for. I really only have $38 to $40 a week for groceries since I do spend anywhere from $10-$12 on milk. We only drink organic and its pricey. H loves his milk.
This week I am challenging myself a bit further and going to try to spend even less. I have quite a bit stocked up in the pantry and freezer so I am going to try to prepare meals that need minimal ingredients (that I don't I already have on hand). In reality I should be shopping like this on a weekly basis so this will become a weekly challenge.

I have been slacking lately on keeping this blog up to date. I will work on staying up to date from now on. My husband works an odd schedule so our main meals are often lunch instead of dinner. This week is kind of strange and though I do have a meal plan it is nothing special. So I am not going to share it but I do have next week's plan completed already and thought I would go ahead and share it with you instead.

Wednesday: Turkey Taco Meatloaf with Mashed Potatoes, and Green Peas

Sunday: Fiberific Chicken Fingers, French Fries, and a vegetable
I will try to share recipes throughout the week as I make things since I typically tweek the recipes a bit. This will be my first week trying to stick to my weekly meal plan. I am not a huge fan of fish but my husband is so I know he will enjoy the extra fish on the menu.
Monday: Blackened Catfish with Mashed Potatoes and Green Peas
Tuesday: Spaghetti with Mushroom Sauce, Garlic Bread, and Green Beans
Wednesday: Turkey Taco Meatloaf with Mashed Potatoes, and Green Peas
